What is it?

A nigori that Akari Shuzo brews only in January. It is strained through a coarse cloth so some rice solids stay in the bottle. Mie-grown Kaminoho milled to 60%, sake meter value −8, 14% ABV. Cloudy white, with sediment that settles at the base.

What does it taste like?

  • Aroma: yoghurt, banana, steamed rice
  • Palate: frankly sweet, with body. Sake meter value −8
  • Fine rice particles on the tongue; the weight is closer to milk than to wine
  • Acidity of 1.7 pulls the back end straight so the sweetness does not linger

How do you drink it?

    Serve at 6–10°C in a heavy tumbler or a sake cup

    Before pouring, lay the bottle down and roll it twice, slowly. Do not shake

    Good over ice: a single cube loosens the sweetness

The maker

About the maker

Nigori becomes a different drink depending on the mesh you press it through. Akari uses a 0.3mm cloth and presses in a third of the usual time; the shortcut is deliberate, and it leaves rice solids and sweetness behind.

From the person who chose it

Sediment keeps settling after bottling. Before you pour, lay the bottle on its side and roll it slowly twice. Shaking it will make it foam out of the neck.

Can it be sent as a gift?

Ships chilled. Presentation box (+550 yen), furoshiki cloth (+1,100 yen), noshi paper and message cards available. The bottle travels inside an opaque sleeve to keep light off it.

Noshi is the paper slip that traditionally accompanies a gift in Japan. Outer noshi goes over the wrapping, so the occasion is visible at a glance. Inner noshi goes under it, for a more understated gift, and is the usual choice for anything shipped.

Questions

Where in Japan can you deliver this?
Anywhere in Japan. Shipping is ¥1,320 (refrigerated delivery) and takes 2–4 business days after dispatch.
Can you deliver to my hotel while I am in Japan?
Hotel front desks hold parcels at room temperature, so chilled and frozen items cannot go there. We send those to an address instead.
Can you ship this abroad?
Shipping alcohol out of Japan needs an export licence for liquor wholesalers, which we are still obtaining. Until then we cannot send it abroad.
Does it need refrigeration?
It travels refrigerated the whole way. Redelivery keeps the cold chain, but please pick a date you can be in for. Chilled and frozen items cannot be sent to a hotel.
How long does it keep?
Eight months from bottling, refrigerated. Nigori gains acidity over time; the sweetness is cleanest within two or three months of arrival.
There is sediment at the bottom. Is that a fault?
It is meant to be there: rice solids that have settled. Roll the bottle gently twice to mix. Some people pour the clear top first and the thick part second, to taste the difference.
