What is it?

The everyday junmai from Akari Shuzo. Mie-grown Kaminoho sake rice milled to 60%, finished with enough acidity to hold together when warmed. 720ml at 15% ABV, good chilled or heated to 45°C.

What does it taste like?

  • Aroma: restrained. Steamed rice, chestnut, a little toasted nut
  • Palate: moderate sweetness held in check by acidity; clean-edged rather than round
  • A light grip on the finish that cuts through fat
  • Warmed to 45°C, both the sweetness and the aroma open a step

How do you drink it?

    Chilled to 8–12°C for sashimi, cold tofu and salads

  • 02

    Room temperature, around 20°C, for fried chicken, simmered dishes and dumplings

  • 03

    Warmed to 45°C (hot but not painful on a fingertip) for oden, sukiyaki and hard cheese

    In a microwave: 180ml in a ceramic flask, 600W, 50 seconds. Never let it boil

The maker

About the maker

Kaminoho is a sake rice bred by Mie Prefecture in 2007. It grows shorter than Yamada Nishiki, so it stands up in Iga's windy paddies. Akari Shuzo switched to it in 2013; it now accounts for about 60% of everything they brew.

From the person who chose it

The label is hand-made paper from a workshop in Iga, thick enough to feel between your fingers. Serving temperatures are printed on the back.

Can it be sent as a gift?

A box wrapped in unbleached paper and tied with linen twine

Ships wrapped in padding inside a plain brown carton. A presentation box (+550 yen), a furoshiki cloth (+1,100 yen), noshi paper and a message card can be added on this page.

Noshi is the paper slip that traditionally accompanies a gift in Japan. Outer noshi goes over the wrapping, so the occasion is visible at a glance. Inner noshi goes under it, for a more understated gift, and is the usual choice for anything shipped.

Questions

Where in Japan can you deliver this?
Anywhere in Japan. Shipping is ¥990 (ambient delivery) and takes 2–4 business days after dispatch.
Can you deliver to my hotel while I am in Japan?
Yes. Give us the name on your booking and your check-in date and we aim to arrive the day before you do. The rate is the same ¥990 as any Japanese address.
Can you ship this abroad?
Shipping alcohol out of Japan needs an export licence for liquor wholesalers, which we are still obtaining. Until then we cannot send it abroad.
Does warming it ruin the flavour?
This one improves. 40–45°C is the window; above 50°C the alcohol turns sharp. Sake that has been warmed and allowed to cool is still perfectly good to drink.
How long does it keep?
About eighteen months sealed. Junmai gains body with a little age, so six months in the cupboard is a change for the better rather than a loss. Two to three weeks refrigerated once opened.
Any allergens?
Rice and rice koji only; none of Japan's declarable allergens. 15% ABV, 720ml.
