A5 chuck roll from Aoyagi Farm in Iga, Mie, sliced to 1.8mm: thick enough for sukiyaki, thin enough for shabu-shabu. 500g serves three to four, shipped chilled. BMS 9, and the fat-to-lean ratio of this cut is what makes it a hot-pot cut.

Take it out of the fridge 20 minutes before you cook, still chilled but not cold

Sukiyaki: melt beef fat in the pan, lay slices flat, shake over a tablespoon of sugar and two of soy sauce, turn after ten seconds

Shabu-shabu: hold kombu broth at 80–85°C, never boiling, three seconds a side

Add vegetables after the beef, so they cook in the fat that has rendered out

Leftovers: shred and simmer with egg the next day rather than reheating slices whole

The maker
In Iga they do not make sukiyaki with a pre-mixed sauce. You melt beef fat in the pan, lay the slices flat, and shake sugar and soy sauce straight onto the meat. The fat and the sugar meet on the surface, and the first slice is always the strongest. That is the local way.

Slices are cut at 1.8mm, slightly thinner than the sukiyaki standard of around 2mm, slightly thicker than shabu-shabu's 1.5mm. One thickness that does both. It is machine-cut, but the blade is sharpened daily and the meat goes through half-frozen.

Noshi is the paper slip that traditionally accompanies a gift in Japan. Outer noshi goes over the wrapping, so the occasion is visible at a glance. Inner noshi goes under it, for a more understated gift, and is the usual choice for anything shipped.
