What is it?

Six 130g hamburg steaks made from coarsely ground Iga beef chuck and brisket from Aoyagi Farm. Bound with nothing but sautéed onion, breadcrumb and egg. They are seared at the kitchen and blast-frozen, so at home you only reheat them in a pan. Ninety days frozen.

How do you cook it?

    Straight from frozen: into a pan with two tablespoons of water, lid on, low heat, twelve minutes

    If thawed first, six hours in the fridge, then three minutes a side on medium

  • 03

    A teaspoon of soy sauce onto the hot pan at the end lifts the aroma

    Microwave: one patty, 600W, four minutes, loosely covered

  • 05

    Better with junmai sake at room temperature or warmed than with red wine

About the maker

Cutting steaks and hot-pot slices always leaves trim at the edges. On cattle finished at thirty-two months that trim still tastes of something, and these hamburg steaks started as the way not to waste it.

Can it be sent as a gift?

A box wrapped in unbleached paper and tied with linen twine

Each patty is vacuum-sealed, and six sit in a plain navy gift box. Noshi paper, wrapping and message cards available; the frozen outer carton carries no product name.

Noshi is the paper slip that traditionally accompanies a gift in Japan. Outer noshi goes over the wrapping, so the occasion is visible at a glance. Inner noshi goes under it, for a more understated gift, and is the usual choice for anything shipped.

Where in Japan can you deliver this?
Anywhere in Japan. Shipping is ¥1,320 (frozen delivery) and takes 3–6 business days after dispatch.

Meat cannot leave Japan under animal quarantine rules, and it cannot be left at a hotel. Japanese addresses only.

Does it need refrigeration?
It travels frozen the whole way. Redelivery keeps the cold chain, but please pick a date you can be in for. Chilled and frozen items cannot be sent to a hotel.
How long does it keep?
Ninety days at −18°C or below. Once thawed, cook within two days. Do not refreeze.
Are they pre-cooked?
They are cooked to a core temperature of 75°C before freezing, so at home you are reheating, not cooking through. A pink cast inside is normal: it is a reaction between the onion and the meat, not undercooking.
