What is it?

Sirloin from Iga beef raised for 32 months at Aoyagi Farm in Iga, Mie Prefecture. Graded A5 with a marbling score of BMS 10, hand-cut into two 200g steaks 2cm thick and shipped frozen. Iga beef is Japanese Black cattle finished for at least twelve months in the Iga area, and almost all of it is maiden heifer.

What does it taste like?

  • The fat melts at around 25°C, so the surface turns glossy just sitting on the counter
  • Cooked, the fat reads sweet and the lean carries a deep savoury weight
  • 200g is the size two people actually finish when the beef is this rich
  • BMS 10 marbling is fine-grained, which makes the finish lighter than coarsely marbled beef

How do you cook it?

  • 01

    Thaw in the fridge for 12–18 hours; in a hurry, 90 minutes in iced water still in its bag. Never in a microwave

  • 02

    Take it out 30 minutes before cooking and pat the surface dry

  • 03

    Sear 90 seconds a side in a hot dry pan: no oil, and stand the fat cap down first

  • 04

    Rest under foil for five minutes, then cut

  • 05

    Salt just before searing. In Iga they eat it with a little wasabi and soy sauce

The maker

About the maker

Around 1,300 head of Iga beef are shipped a year, less than a third of Matsusaka's volume, and most of it is eaten inside Mie Prefecture. Very little leaves the region, which is why the name is unfamiliar to most people.

From the person who chose it

The steaks are cut by hand with a knife rather than a machine slicer: a crushed cut surface lets the juices escape in the pan.

Can it be sent as a gift?

A gift box of beef packed with cold packs and finished with a paper band

Each steak is vacuum-sealed and packed frozen in an insulated box with gel packs and dry ice. Presentation box, noshi paper and message cards available. A bilingual cooking sheet is included.

Noshi is the paper slip that traditionally accompanies a gift in Japan. Outer noshi goes over the wrapping, so the occasion is visible at a glance. Inner noshi goes under it, for a more understated gift, and is the usual choice for anything shipped.

Where in Japan can you deliver this?
Anywhere in Japan. Shipping is ¥1,320 (frozen delivery) and takes 3–6 business days after dispatch.
Can you deliver to my hotel while I am in Japan?
Meat cannot leave Japan under animal quarantine rules, and it cannot be left at a hotel. Japanese addresses only.

Does it need refrigeration?
It travels frozen the whole way. Redelivery keeps the cold chain, but please pick a date you can be in for. Chilled and frozen items cannot be sent to a hotel.
How long does it keep?
Sixty days from packing at −18°C or below. Once thawed, cook within two days in the fridge. We do not recommend refreezing, because the texture suffers.
Ingredients and allergens?
Beef only, from Iga in Mie Prefecture, with no additives or seasoning. The declarable allergen present is beef. The processing facility also handles products containing wheat, egg, milk and soy.
