What is it?

A5 Iga beef sirloin from Aoyagi Farm (two 200g steaks) with a 720ml bottle of Hatsuakari junmai daiginjo from Akari Shuzo, a brewery in the same town, presented in a wooden box. Because it contains beef it ships frozen, within Japan only. A bilingual pairing card is included.

How do you drink it?

    The day before: move the beef from freezer to fridge, 12–18 hours to thaw

  • 02

    On the day: beef out of the fridge 30 minutes ahead; sake held at 10–12°C

  • 03

    Sear 90 seconds a side in a hot dry pan, then rest five minutes

  • 04

    Pour the sake while it rests; a wine glass shows the aroma

The maker

About the maker

Aoyagi Farm and Akari Shuzo are fifteen minutes apart by car from the centre of Iga. They have dealt with each other for years: spent lees from the brewery go into the farm's feed, and compost from the farm goes onto the paddies the brewery contracts.

From the person who chose it

The wooden boxes are made by a joiner in Iga from offcuts, so the grain differs on every one. When the food is gone, it works as a tool box.

Can it be sent as a gift?

A wooden box from Iga holding the vacuum-sealed beef, the bottle and the bilingual pairing card, shipped frozen in an unmarked outer carton. Noshi paper and a message card are free; a gift box or furoshiki costs extra. There's no invoice in the box.

Noshi is the paper slip that traditionally accompanies a gift in Japan. Outer noshi goes over the wrapping, so the occasion is visible at a glance. Inner noshi goes under it, for a more understated gift, and is the usual choice for anything shipped.

Questions

Where in Japan can you deliver this?
Anywhere in Japan. Shipping is ¥1,320 (frozen delivery) and takes 3–6 business days after dispatch.
Can you deliver to my hotel while I am in Japan?
Hotel front desks hold parcels at room temperature, so chilled and frozen items cannot go there. We send those to an address instead.
Can you ship this abroad?
Shipping alcohol out of Japan needs an export licence for liquor wholesalers, which we are still obtaining. Until then we cannot send it abroad.
Does it need refrigeration?
It travels frozen the whole way. Redelivery keeps the cold chain, but please pick a date you can be in for. Chilled and frozen items cannot be sent to a hotel.
Can I change what is in it?
You can swap the sake for the Hibiakari junmai or the ten-year koshu; we will email you about the price difference after you order. The beef can also be changed to the 500g sukiyaki slices.
Can someone under 20 buy or receive it?
No. The set contains alcohol, so both the buyer and the person receiving it must be 20 or over. Age is confirmed at checkout and again on delivery.
Ingredients and allergens?
The beef is beef from Iga and nothing else; the sake is rice and rice koji only. Declarable allergen present: beef. The processing facility also handles wheat, egg, milk and soy.
